Cinnamon Bun Cake


You are going to go absolutely crazy over this new dessert recipe, I promise! I made this on a Monday afternoon and by Tuesday morning it was completely gone! I found this recipe on Pinterest, an amazing treasure trove of recipes, and after a few tweaks it turned out perfectly!

Cinnamon Bun Cake

Prep time: 30 mins
Cook time: 25-30 mins
Total time: 1 hour
Yield: 8 slices

Ingredients
Cake:
3 cups flour
1 cup sugar
4 tsp baking powder
1.5 cup milk
2 eggs
2 tsp vanilla
.5 cup butter, melted
Sprinkle of salt
Sprinkle of cinnamon

Topping:
6 tbsp butter, softened
1 cup brown sugar
2 tbsp flour
1 tbsp cinnamon

Glaze:
1.5 cups powdered sugar
4 tbsp milk
1 tsp vanilla

What You Do

  1. Preheat your oven to 350 F or around 175 C
  2. Mix all your cake ingredients together except for the melted butter. Add the butter once all other ingredients are combined. 
  3. Pour your combined cake mix into your greased 8x8 pan. Sprinkle half a tablespoon of cinnamon on top of the cake mix in the pan and spread throughout the mixture with a spatula. 
  4. Combine your topping ingredients, except for the butter, together in a small bowl. Cut your softened butter into small chunks and add to the topping mixture. Clump together with your hands and mix with a spoon until crumbly bits form. Be careful not to over-mix into powder, but don't under-mix and leave too much butter uncoated and raw. 
  5. Sprinkle your topping bits over the cake batter in the pan and swirl them throughout your cake to get good coverage. 
  6. Bake for 25-30 minutes, until the top is a golden brown and a toothpick inserted comes out clean.
  7. While the cake is baking, make your glaze. Mix together your powdered sugar, 3 tablespoons of milk, and vanilla. If the mixture is too thick, add a tablespoon of milk. The mixture should not be liquid-y but shouldn't be too thick either.
  8. As soon as the cake is done and you pull it out of the oven, drizzle the glaze mixture over top.
  9. Enjoy! (Best when warm)
